Cheese with spun paste, it is frozen as soon as it is produced to preserve its characteristics and to facilitate its preservation.
It is similar to mozzarella and it contains inside a heart of cream and stracciatella, or frayed mozzarella.
The external part consists of a compact mozzarella wrapper with uniform consistence enclosing filaments of frayed mozzarella in milk cream.
It is formed by a puff pastry dough and when it is filled it is closed in the upper part and tied by hand to form its classic tuft. Today it is considered the top of traditional Apulian cheese production.
