“Burrata in foglia” is a creamy dairy product contained in a “leaf” wrap in order to preserve its soft consistency.

It is similar to mozzarella and it contains inside a heart of cream and stracciatella, or frayed mozzarella.

It is formed by a puff pastry dough, which once stuffed, it is closed in the upper part and tied by hand to form its classic tuft.

Today it is considered the top of traditional Apulian cheese production.
