The scamorza, a spun paste cheese, owes its denomination to the verb “scamozzare” that means “remove a part”; originally, in fact, the cheesemakers split the spun paste with their hands, giving it a pear shape.

It can become smoked going into a smokehouse, to acquire the classic and characteristic aroma and appearance. Its consistency, whether it is classic or smoked, is compact but soft.
