Fresh pasta, with peppers cream and burrata


  • Fresh pasta 180 g;
  • A blond onion (an half)
  • 2 red peppers;
  • 10 burrata (100 g each one)
  • Wild rocket (as required)
  • Extra Virgin Olive Oil (as required)
  • Salt

Ricetta Caserecci

  1. Sweat an half a finely chopped onion in a pan with a little oil and water, while in the meantime wash and cut the peppers into strips;
  2. Add the peppers and cook for at least 25-30 minutes, adding water when is needed. Season with salt and pepper;
  3. Boil water in a large pot for cooking pasta. Blend the pepper and onion, reducing it to a cream. Meanwhile, wash well the wild rocket and chop up a part;
  4. Cook the pasta for about 10 minutes, drain it and stir-fry it for 2 minutes with the cream of peppers, lengthening it with cooking water;
  5. Prepare the dishes by putting on the bottom the chopped rocket and an half of burrata sliced in small pieces, then put pasta and the remaining burrata and a little raw extra virgin olive oil on the top ; serve the pasta with cream of peppers and burrata.
